Ingredients
1 cup cornmeal
1 cup all-purpose flour
2 tbsp sugar (optional)
1 tbsp baking powder
½ tsp salt
1 cup unsweetened plant milk
¼ cup vegetable oil
1 tsp apple cider vinegar
Instructions
Preheat your oven to 400°F (200°C) and line a muffin tin.
Mix the cornmeal, flour, sugar, baking powder, and salt.
Stir together the plant milk, oil, and apple cider vinegar.
Combine the wet and dry ingredients until just mixed.
Fill muffin cups about ¾ full.
