Bake: 12–14 minutes

Total: 30 minutes

Servings: 4

Ingredients

½ cup (115g) unsalted butter

4 oz (115g) semi-sweet or dark chocolate, chopped

1 cup (120g) powdered sugar

2 large eggs

2 large egg yolks

1 tsp vanilla extract

¼ cup (30g) all-purpose flour

Pinch of salt

Butter and cocoa powder for greasing ramekins

Optional Toppings

Vanilla ice cream

Fresh strawberries or raspberries

Whipped cream

Chocolate shavings

Powdered sugar

Fresh mint leaves

Instructions

Step 1: Prepare the Ramekins

Preheat the oven to 425°F (220°C). Grease four 6-ounce ramekins with butter and dust lightly with cocoa powder.

Step 2: Melt Chocolate

In a microwave-safe bowl or over a double boiler, melt the butter and chocolate together. Stir until smooth and let cool slightly.

Step 3: Mix the Batter

Whisk the eggs, egg yolks, powdered sugar and vanilla until light and smooth.

Slowly whisk in the melted chocolate mixture.

Fold in the flour and salt until just combined.

Step 4: Fill the Ramekins

Divide the batter evenly among the prepared ramekins, filling each about ¾ full.

Step 5: Bake

Bake for 12–14 minutes. The edges should be set while the center remains soft and slightly jiggly.

Step 6: Serve

Let the cakes rest for 1 minute.

Run a knife around the edges, place a plate on top and carefully invert the ramekin.

Serve immediately while the chocolate center is still molten.

Tips for Perfect Lava Cakes

Don't overbake or the center will fully cook.

Use high-quality chocolate for the richest flavor.

Grease ramekins well for easy release.

Serve immediately after baking for the best molten effect.

Prepare the batter a few hours ahead and refrigerate until ready to bake.

Storage

Refrigerate leftovers for up to 2 days.

Reheat in the microwave for 15–20 seconds before serving.

Unbaked batter can be refrigerated for up to 24 hours.
