Ingredients
1½ cups whole-milk ricotta
1 tablespoon extra-virgin olive oil
1 tablespoon fresh lemon juice
1 small garlic clove, minced
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon fresh basil or parsley, chopped
Red pepper flakes, optional
Honey, optional for drizzling
How to Make It
1. Add the ricotta
Place ricotta, olive oil, lemon juice, garlic, salt and pepper in a food processor.
2. Whip until smooth
Blend for about 1–2 minutes, scraping the sides once or twice, until the ricotta becomes smooth, fluffy and creamy.
3. Taste and adjust
Add more lemon juice or salt if needed. For a little heat, mix in red pepper flakes.
4. Plate the dip
Spoon the whipped ricotta into a shallow serving bowl. Use the back of a spoon to create small swirls.
5. Add toppings
Drizzle with olive oil and sprinkle with fresh herbs. For a sweet-and-savory version, add a small drizzle of honey and a pinch of chili flakes.
