Ingredients
1 cup plain Greek yogurt
½ English cucumber, grated
1–2 garlic cloves, minced
1 tablespoon fresh lemon juice
1 tablespoon extra-virgin olive oil
1 tablespoon fresh dill, finely chopped
½ teaspoon salt
Black pepper, to taste
How to Make Tzatziki
1. Grate the cucumber
Grate the cucumber using the large holes of a box grater.
2. Remove excess water
Place the grated cucumber in a clean kitchen towel or fine strainer and squeeze out as much liquid as possible. This prevents watery tzatziki.
3. Mix the ingredients
Add Greek yogurt, cucumber, garlic, lemon juice, olive oil, dill, salt and pepper to a bowl. Stir until creamy and well combined.
4. Chill
Cover and refrigerate for at least 30 minutes. Chilling allows the garlic, herbs, lemon and cucumber flavors to blend.
5. Serve
Drizzle with a little olive oil and garnish with fresh dill. Serve with warm pita, fresh vegetables, gyros, grilled chicken, kebabs or as a sandwich spread.
